Injera with Doro Wat — Spongy teff sourdough flatbread served as both plate and utensil, topped with doro wat — a slow-cooked chicken stew with berbere spice and a hard-boiled egg. The centrepiece of Ethiopian cuisine.

Beyaynetu Fasting Platter — The extraordinary vegetarian spread served on Orthodox fasting days — misir wat (red lentils), gomen (collard greens), timatim (spiced tomato), and shiro (chickpea stew) on injera.
