Gishora Drum Sanctuary — The Gishora hill above Gitega holds the sacred royal drum sanctuary — Ingoma drummers perform in full ceremonial dress in a tradition dating to the Burundian kingdom, now UNESCO Intangible Cultural Heritage.

Lake Tanganyika — One of the world's great lakes — extraordinarily clear, biologically unique, and beautiful. Bujumbura's sandy shoreline, the snorkelling among endemic cichlids, and the sunset over the Congolese mountains make this one of East Africa's finest lake experiences.

Kibira National Park — Burundi's largest national park — a vast montane rainforest on the ridge between the Congo and Nile basins, holding chimpanzees, colobus monkeys, and extraordinary Afromontane birds.

Grilled Capitaine from Tanganyika — Capitaine (Nile perch) or tilapia pulled from Lake Tanganyika and grilled whole over charcoal — served with fried plantain, tomato and onion salsa, and cold Primus at a Bujumbura beach restaurant.

Ubugali and Ibiharage — Stiff cassava paste (ubugali) served with ibiharage — red kidney beans slow-cooked with onion, tomatoes, and palm oil. The fundamental daily food of highland Burundi, eaten from a shared plate.

Brochettes and Mandazi — Spiced beef or goat brochettes at roadside grills; mandazi (East African doughnuts fried in oil) sold at every market stall from dawn — the universal Burundian street breakfast.

Sambaza — Tanganyika Sardines — Sambaza are tiny fried sardines unique to Lake Tanganyika — crispy, salty, and eaten by the plateful as a bar snack with cold beer or fried and served over rice at lakeside restaurants.
