Colosseum — The 50,000-seat Flavian Amphitheatre where gladiators fought and emperors entertained. Book a combined ticket with the Roman Forum and Palatine Hill. Underground and arena floor tours are extraordinary.

Cacio e Pepe — Rome's simplest and most perfect pasta: tonnarelli tossed with Pecorino Romano and black pepper to form a creamy, sharp, peppery sauce. Three ingredients. Total perfection.

Carbonara — Guanciale (cured pork cheek), egg yolks, Pecorino Romano, and black pepper — never cream. The silky sauce should cling to every strand of rigatoni. Rome's greatest contribution to pasta.

Supplì — Fried rice balls stuffed with mozzarella that stretches into a 'telephone wire' when you break them open. The Roman answer to Sicilian arancini — crunchier and smaller.

Saltimbocca alla Romana — Veal escalopes wrapped with prosciutto and sage, pan-fried in butter and white wine. The name means 'jumps in the mouth' — and it does.
