Local Food

Baguettes & Croissants — New Caledonia's French heritage means outstanding bakeries (boulangeries) everywhere. Flaky croissants, crusty baguettes, and pain au chocolat as good as anything in Paris.

Bougna — The traditional Kanak dish — chicken, lobster, or fish with yam, sweet potato, and banana, wrapped in banana leaves with coconut milk and slow-cooked in an earth oven.

Poisson Cru — Raw tuna or mahi-mahi marinated in lime juice and coconut milk with vegetables — the Pacific's answer to ceviche, here with a distinctly French touch.

Cerf (Deer) Steak — New Caledonia's rusa deer, introduced in the 19th century, are now a local delicacy. Grilled deer steaks, sausages, and terrines are found on many menus.
