Hagia Sophia — Built in 537 AD as a cathedral, converted to a mosque, and one of the world's greatest architectural achievements. The massive dome, gold mosaics, and Islamic calligraphy coexist in breathtaking harmony.

Topkapi Palace — The sprawling palace complex of Ottoman sultans for 400 years. Treasury with the 86-carat Spoonmaker's Diamond, the Harem, and stunning Bosphorus views from the terraces.

Blue Mosque (Sultan Ahmed) — The only imperial mosque with six minarets, famous for its cascade of domes and over 20,000 blue Iznik tiles lining the interior. Free to visit outside prayer times.

Grand Bazaar — A labyrinthine covered market with over 4,000 shops selling carpets, ceramics, jewellery, leather, and spices across 61 streets. Haggling is expected and part of the experience.

Basilica Cistern — A vast subterranean cistern built by Justinian in 532 AD, with 336 marble columns rising from the water. Atmospheric lighting reveals two Medusa head column bases.

Balık Ekmek — Grilled mackerel fillet in crusty bread with lettuce, onion, and a squeeze of lemon, sold from boats bobbing at the Eminönü waterfront. Istanbul's signature street bite.

Kebap Varieties — From Iskender (sliced döner on bread with tomato sauce and yoghurt) to Adana (spicy minced lamb on a skewer). Each region's kebap style has dedicated restaurants in Istanbul.

Turkish Breakfast (Kahvaltı) — An elaborate spread of cheeses, olives, tomatoes, cucumbers, honey, kaymak cream, eggs, simit bread, and endless çay tea. Weekend breakfasts can last hours.

Midye Dolma — Stuffed mussels filled with fragrant spiced rice, pine nuts, and currants, sold from street carts along the Bosphorus. Squeeze lemon and eat straight from the shell.
