Top Places to Visit

Fes el-Bali Medina — A UNESCO World Heritage labyrinth of over 9,000 narrow alleys, home to mosques, madrasas, fountains, and workshops. Getting lost is inevitable and part of the magic.

Chouara Tannery — The most famous of Fes's medieval tanneries, where leather is still dyed by hand in stone vats filled with natural pigments. Best viewed from surrounding leather shop terraces.

Bou Inania Madrasa — A stunning 14th-century theological college with intricate zellige tilework, carved cedar, stucco arabesques, and a rare water clock. One of the few religious buildings non-Muslims may enter in Fes.

Al-Attarine Madrasa — A 14th-century Marinid madrasa next to the spice souk, featuring some of the finest decorative tilework and carved wood in Morocco. Its intimate courtyard is breathtaking.

University of al-Qarawiyyin — Founded in 859 AD and recognized by UNESCO as the oldest continuously operating university in the world. The mosque and library were recently restored; courtyard views are possible from adjacent shops.

Fassi Tagine — Fes is considered Morocco's culinary capital — the tagine here features refined combinations like lamb with quince and cinnamon, or chicken with preserved lemons, olives, and saffron.

Harira — A hearty tomato-based soup with lentils, chickpeas, and vermicelli, traditionally served to break the Ramadan fast but available year-round from street stalls throughout the medina.

Kaab el Ghazal — Crescent-shaped 'gazelle horn' pastries filled with almond paste and orange blossom water — a Fassi specialty found in pastry shops throughout the medina.

Mechoui — Whole lamb slow-roasted in an underground clay oven until the meat falls off the bone. Often served at celebrations but available at specialist restaurants near Bab Boujloud.
